Marinated Salomon with Potatoes

JUICY HERB-MARINATED SALMON SIDE WITH POTATOES & CREAMY ROE SAUCE

Ingredients – Salmon & Potatoes

  • Baby potatoes, 1 kg
  • Whole salmon side, 1
  • Butter, 25 g
  • Olive oil, 0.5 dl
  • Liquid honey, 2 tbsp
  • Juice from 1/2 lemon
  • Garlic cloves, 2–3
  • Fresh herbs of your choice (I use parsley, basil, chives, dill), about 1–1.5 dl total
  • Salt, lemon pepper, paprika powder, about 1 tsp each

Ingredients – Roe Sauce

  • Crème fraîche or sour cream, 4 dl
  • Mayonnaise, 0.75 dl
  • Lumpfish roe, 80 g
  • Finely chopped red onion, 1/2
  • Finely chopped chives, 0.5 dl
  • Finely chopped dill, 0.5 dl
  • Lemon juice, 2 tbsp
  • Salt and pepper to taste

Instructions

  1. Heat the oven to 200°C. Boil the potatoes for about 10 minutes until half-done. Finely chop the herbs and press the garlic.
  2. Melt the butter with the oil in a small pot. Add honey, lemon juice, garlic and herbs. Stir for about 30 seconds, then remove from the heat.
  3. Place the salmon on a baking tray and spread the potatoes around it. Drizzle some oil over the potatoes and season with salt and pepper. Season the salmon with salt, lemon pepper and paprika, then brush on the herb marinade.
  4. Bake in the middle of the oven for 25–30 minutes or until cooked through. Meanwhile, mix all ingredients for the sauce.
