Masaman Curry with Chicken

This is how we do it in our family;

Ingredients

  • 400 g chicken, cut into small cubes
  • 4 potatoes
  • 4 yellow onions
  • 2 dl peanuts
  • 8 dl coconut milk
  • 4 tbsp Massaman curry paste
  • 2 tbsp palm sugar
  • 2 tbsp Asian fish sauce
  • 1 tbsp tamarind sauce
  • Salt
  • Oil

Instructions

  1. Cut the chicken into medium-sized cubes.
  2. Finely chop the onions and peanuts.
  3. Heat oil in a pot.
  4. Add the Massaman curry paste and let it simmer for about 5 minutes.
  5. Add the chicken and fry it together with the paste.
  6. Add the coconut milk, potatoes, onions, and peanuts.
  7. Simmer under a lid for about 20 minutes. Season with palm sugar, fish sauce, and salt to taste.
  8. Serve with Rice
