Healthy Baked Sweet Potato with Lean Ground Beef

A simple, nutritious, and high-protein meal that’s perfect for lunch or dinner.

Ingredients (2 servings)

  • 2 medium sweet potatoes (about 500 g)
  • 300 g lean ground beef (5% fat)
  • 2 fresh tomatoes, diced (about 200 g)
  • 1 onion, finely chopped
  • 2 garlic cloves, minced
  • 1 tbsp olive oil
  • 1 tsp paprika
  • Salt and black pepper to taste
  • Fresh parsley or basil
  • Chili flakes (optional)

Instructions

  1. Preheat the oven to 200°C (390°F).
  2. Pierce the sweet potatoes with a fork and bake for 50–60 minutes, or until soft.
  3. Heat the olive oil in a pan and sauté the onion and garlic.
  4. Add the ground beef and cook until browned.
  5. Season with paprika, salt, and black pepper.
  6. Stir in the diced tomatoes and let simmer for about 5 minutes.
  7. Slice open the baked sweet potatoes and fill them with the beef mixture.
  8. Garnish with fresh herbs and chili flakes if desired.
