Healthy Baked Sweet Potato with Lean Ground Beef
A simple, nutritious, and high-protein meal that’s perfect for lunch or dinner.
Ingredients (2 servings)
- 2 medium sweet potatoes (about 500 g)
- 300 g lean ground beef (5% fat)
- 2 fresh tomatoes, diced (about 200 g)
- 1 onion, finely chopped
- 2 garlic cloves, minced
- 1 tbsp olive oil
- 1 tsp paprika
- Salt and black pepper to taste
- Fresh parsley or basil
- Chili flakes (optional)
Instructions
- Preheat the oven to 200°C (390°F).
- Pierce the sweet potatoes with a fork and bake for 50–60 minutes, or until soft.
- Heat the olive oil in a pan and sauté the onion and garlic.
- Add the ground beef and cook until browned.
- Season with paprika, salt, and black pepper.
- Stir in the diced tomatoes and let simmer for about 5 minutes.
- Slice open the baked sweet potatoes and fill them with the beef mixture.
- Garnish with fresh herbs and chili flakes if desired.
