Pasta with Chicken and Dijon

Creamy Pasta Salad with Dijon and Fresh Herbs

Ingredients

  • Pasta
  • 1 red onion
  • 2 tomatoes
  • 1/2 cucumber
  • Arugula (rocket)
  • 2 garlic cloves
  • 1–2 tbsp Dijon mustard
  • Fresh basil
  • Fresh thyme
  • Pine nuts
  • Olive oil
  • Salt and black pepper

Instructions

  1. Cook the pasta and let it cool slightly.
  2. Lightly toast the pine nuts in a dry pan.
  3. Finely chop the red onion. Dice the tomatoes and cucumber.
  4. Mix olive oil, Dijon mustard, crushed garlic, salt, and pepper into a dressing.
  5. Combine the pasta, vegetables, and arugula in a large bowl.
  6. Add fresh basil and thyme.
  7. Pour over the dressing and top with toasted pine nuts.

Works well as a light lunch or served with chicken, grilled meat, or salmon. Add a little crème fraîche or parmesan if you want it extra creamy.
