Creamy Pasta Salad with Dijon and Fresh Herbs
Ingredients
- Pasta
- 1 red onion
- 2 tomatoes
- 1/2 cucumber
- Arugula (rocket)
- 2 garlic cloves
- 1–2 tbsp Dijon mustard
- Fresh basil
- Fresh thyme
- Pine nuts
- Olive oil
- Salt and black pepper
Instructions
- Cook the pasta and let it cool slightly.
- Lightly toast the pine nuts in a dry pan.
- Finely chop the red onion. Dice the tomatoes and cucumber.
- Mix olive oil, Dijon mustard, crushed garlic, salt, and pepper into a dressing.
- Combine the pasta, vegetables, and arugula in a large bowl.
- Add fresh basil and thyme.
- Pour over the dressing and top with toasted pine nuts.
Works well as a light lunch or served with chicken, grilled meat, or salmon. Add a little crème fraîche or parmesan if you want it extra creamy.
